Be versatile - use blueberries, strawberries or raspberries. Even try bananas.
Yield: 4 to 5 servings
Beat the eggs and soymilk in a mixing bowl. Add flour, cornstarch, baking powder, baking soda, honey and cultured soy. Beat well. Then stir in the blueberries and the oil. Cook on a hot griddle.
You can substitute blueberries for any other fruit you like (bananas, strawberries, raspberries, etc.).
