In a large skillet over medium heat, saute potato and onion in butter until tender. Pour beaten eggs into skillet; sprinkle with salt and pepper. Cook, stirring often, until mixture is set. Divide mixture evenly between tortillas; top with cheese. Fold tortillas over egg mixture and serve at once.
