In a small bowl, combine butter, parsley, orange zest and coriander; mix well. Place butter mixture on sheet of plastic wrap; shape into log. Wrap and refrigerate while preparing chops. Preheat grill. Rub both sides of chops with oil; sprinkle with salt and pepper. Place chops on lightly oiled grill and grill 7 to 10 minutes on medium heat, turning once or twice. To serve, top each lamb chop with a dollop of orange coriander butter.
